    Grandma Mable’s Candied Sweet Potatoes

Sweet potatoes cooked anyway are my absolute favorite vegetable.  I love sweet potatoes steamed, baked, fried, and mashed.  Sweet potatoes are perfect without any added butter or sugar, but if you do add butter and sugar, it just amplifies the taste.  Growing up, my Grandmother Mabel always made candied sweet potatoes for Thanksgiving and Christmas every year.  I love the sweet and salty combination of her sweet potatoes and that savory cornbread dressing she always made.  Grandma Mabel’s dressing was to die for! Grandma would usually bake her candied sweet potatoes but occasionally she would cook them over a stove and that is my favorite way of cooking them.  The…

    Tomato and cucumber salad

Tomato and cucumber salad is seriously the easiest side dish to make, yet it is so refreshing and light which makes this salad a perfect companion to any rich or heavy dish.  I recently made some shrimp and grits (recipe to come soon) and did not want the hassle of making a traditional salad with croutons, romaine, eggs, or whatever one puts in a salad. This particular side dish stems from a similar quick cucumber salad my grandma Mabel use to make.  I use to live next door to my grandma and would eat dinner there quite often and she would keep a batch of her cucumber salad in…

    Spring Cookie Cups

I made these bad boys for Easter (sorry, I should have posted this recipe last month) and they were a hit! My husband and mother do not have a sweet tooth and loved these cookie cups. If you have a hankering for something light with a hint of sweetness, these sugar cookie cups are a must to make. If you ever had a fruit pizza with sugar cookie dough as the base, then this is very similar to that. While researching this dessert, I came across many sites with this dessert but there were such a range of ingredients and I am like, why complicate my life and pocket? My…

    Oven-baked Meatballs

Who doesn’t like homemade meatballs? They are very versatile. You can use any ground meat that you prefer, so that definitely is a win for anyone that loves meatballs! Here are some uses for the good ol’ meatball: meatballs and spaghetti, meatball subs, Swedish meatballs, meatball sliders, slow-cooker party meatballs (barbecue sauce and grape jelly), meatball stroganoff, the list can go on and on. They can go on pizza, be used for soups, and a variety of pasta dishes. It’s a meatball galore! I used this particular meatball recipe for a spaghetti I had to whip up real quick. And yes, I used jarred tomato sauce, (no judging!🤭) BUT I…

    Pan Chicken and Gravy

The weather in Tennessee is as fickle as a teenager. Last week was one of those weeks. One day it’s 60 degrees and the next day it is 45 degrees. 🤦🏽‍♀️ On the 45 degree day, I was craving something hearty and warm. I was looking everywhere for a chicken and gravy recipe that didn’t require cooking on the stove first then finishing it off in the oven. While there were still pretty good recipes out there, I had to tweak a few recipes in order to come up with a version everyone in my family and I absolutely loved. I like to make pretty quick meals because my time…

Another soy and honey glazed chicken thigh recipe for the internet

I typed in “soy, honey, garlic, and chicken thighs” into google and a whole bunch of recipes popped up. I begin to look at 3 or 4 of them and they all have the same ingredients with different measurements and cooking techniques. Well I won’t say mine is better than so and so’s, BUT I would love for you to try my recipe. At least just once! Now, I come from a line of Home cooks and we hardly measure anything, only unless we bake and then I typically add or takeaway when baking certain desserts. I will give measurements with all my recipes but as Rachael Ray says, “eyeball…
