    Sweet potatoes cooked anyway are my absolute favorite vegetable.  I love sweet potatoes steamed, baked, fried, and mashed.  Sweet potatoes are perfect without any added butter or sugar, but if you do add butter and sugar, it just amplifies the taste.  Growing up, my Grandmother Mabel always made candied sweet potatoes for Thanksgiving and Christmas every year.  I love the sweet and salty combination of her sweet potatoes and that savory cornbread dressing she always made.  Grandma Mabel’s dressing was to die for!     I am a tad bit late on this particular post seeing how this day trip I planned was during the kids spring break.  We went to this little place called Discovery Park of America and it is only 3 hours from Nashville.  I am ashamed of myself for not discovering this place a long time ago.  I have been looking for one day family outings and this place is perfect for that.     Who doesn’t like homemade meatballs? They are very versatile. You can use any ground meat that you prefer, so that definitely is a win for anyone that loves meatballs! Here are some uses for the good ol’ meatball: meatballs and spaghetti, meatball subs, Swedish meatballs, meatball sliders, slow-cooker party meatballs (barbecue sauce and grape jelly), meatball stroganoff, the list can go on and on.     So my very spunky daughter Ava, recently turned 5 and she decided she wanted to have her birthday celebration at the American Girl store in Franklin.     Since I was a little kid in the early 80’s with big glasses and big imaginations, Ruby Falls has always been one of my family go to’s for a quick weekend trip.
